Tex-Mex Corn Saute Recipe

Ingredients

vegetable cooking spray

1 tablespoon olive oil

3/4 cup chopped green pepper

3/4 cup chopped onion

1 teaspoon ground cumin

2 1/2 cups fresh corn

2 large ripe tomatoes, peeled and chopped

1/2 teaspoon sugar

1/4 teaspoon salt

1/2 to 1 teaspoon hot sauce (such as Tabasco)

1/4 cup minced fresh cilantro or parsley

 

Method

Coat a large heavy skillet with cooking spray; add oil and place over medium-high heat until hot. Add green pepper and onion; saute until tender. Stir in cumin; add corn, and saute 3 to 5 minutes or until corn is just tender. Stir in tomatoes, sugar, salt, and hot sauce; saute 3 minutes. Remove from heat; stir in cilantro.
