Sweet Turnip Puree Recipe

Turnips are often unloved. Give them a chance! This dish sweetens turnips with pears and apple juice and then adds a tangy cheese touch at the end.

 

Ingredients

1 tablespoon reduced-fat soft margarine

2 tablespoons minced shallots

2 pounds turnips, peeled and cut into 1-inch pieces

1/2 cup unsweetened apple juice

1/2 cup water

2 pounds pears, peeled, cored, and cut into 1-inch pieces

1/2 teaspoon salt

1/2 teaspoon white pepper

1/4 teaspoon freshly grated nutmeg

1/2 cup finely crumbled Gorgonzola cheese

Method

Melt margarine in a large heavy saucepan over medium heat; add shallots and cook until tender. Add turnips, apple juice, and water to skillet; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Stir in pears; cover and continue cooking 20 to 35 minutes or until turnips and pears are very tender. Increase heat; uncover and boil, stirring frequently, until all liquid is evaporated.

 

Preheat oven to 350o. Transfer half of mixture to a food processor; add salt, pepper, and nutmeg, and process until smooth. Transfer to a bowl; repeat procedure using remaining turnip mixture. Stir into bowl; spoon mixture into a 1- x 1 1/2 quart casserole coated with cooking spray; sprinkle with cheese. Bake for 10 to 15 minutes or until hot.
