Sweet-Sour Red Cabbage with Apples and Walnuts Recipe

Cabbage and apples are made for each other.

 

Ingredients

2 pounds thinly sliced red cabbage

1/2 cup apple cider

1/4 cup plus 3 tablespoons firmly packed light brown sugar

1/4 cup plus 3 tablespoons cider vinegar

1/4 teaspoon crushed caraway seeds

1/2 teaspoon salt

1/2 teaspoon freshly ground pepper

2 Granny Smith apples, peeled, cored, and cut into 8 wedges each

1/4 cup finely chopped toasted walnuts

 

Method

Combine cabbage and enough water to cover in a Dutch oven, Cover and bring to a boil. Boil 5 minutes or just until tender. Drain well.

 

Combine cabbage, apple cider, brown sugar, vinegar, and caraway seeds in a large saucepan. Bring to a boil, stirring constantly until sugar melts. Cover, reduce heat, and simmer 15 to 20 minutes or until apples are tender. Uncover and cook over high heat, stirring gently, just until liquid evaporates. Stir in walnuts; serve hot.
