Mint Peas Recipe

Fresh chives, mints, and mint jelly give a memorable lift to peas.

 

Ingredients

2 cups frozen tiny tender peas, thawed

3 tablespoons chicken broth or water

2 tablespoons reduced-fat soft margarine

2 tablespoons mint jelly

1 tablespoon minced fresh chives

1 tablespoon minced fresh mint

 

Method

Combine peas and broth in a medium saucepan; cover and bring to a simmers. Cook 3 to 5 minutes or until peas are tender. Stir in margarine, mint jelly, and chives. Cook over low heat, stirring constantly, until hot.

 

Note: If desired, substitute hot pepper jelly for mint jelly.
