Green Beans with Caramelized Onion and Tomato Relish Recipe

Ingredients

2 teaspoons reduced-fat soft margarine

1 cup finely chopped onion

1 tablespoon sugar

1 tablespoon balsamic vinegar

4 large plum tomatoes, seeded and chopped

1/4 teaspoon salt

1/4 teaspoon freshly ground pepper

2 tablespoons minced fresh basil or oregano

3/4 pound fresh green beans, trimmed and cut into 2-inch lengths

 

Method

Melt margarine in a heavy large skillet over medium heat; add onion and sugar, and saute until onion is tender and golden brown. Stir in vinegar, and saute 1 to 2 minutes or until liquid evaporates. Stir in tomatoes, salt, pepper, and basil; cook just until hot. Remove from heat and keep warm.

 

Cook green beans, in 2 inches of boiling water, in a medium saucepan 10 minutes or until just tender. Drain, and toss with tomato relish in a serving bowl.
