Creole Okra Tomatoes Recipe |

This dish nearly illustrated the benefits of using small amounts of bacon for flavoring. The flavor permeated the entire dish, yet each serving has only two grams of fat, with only one gram saturated.
Ingredients 3 slices bacon 1 large sweet onion, chopped 4 cups sliced fresh okra or frozen okra, thawed 1 (14 1/2-ounce) can unsalted whole tomatoes, drained and chopped 1 bay leaf, broken 2 tablespoons minced fresh thyme or 1/2 teaspoon dried thyme 1/4 teaspoon salt 1/4 to 1/2 teaspoon red pepper
Method Cook bacon in a large heavy nonstick skillet until crisp; remove bacon, reserving 2 teaspoons drippings in skillet. Crumble bacon and set aside.
Add onion to skillet; saute over medium heat until tender. Add okra, tomatoes, bay leaf, thyme, salt, and red pepper; cover and cook 15 minutes. Uncover and cook 3 to 5 minutes or until okra is tender and liquid is mostly evaporated. Stir in bacon.
