Creamed Peas and Onions Recipe

A quick, rich-tasting classic without the cream.

 

Ingredients

3 cup frozen petite green peas

2 cups frozen pearl onions

 /12 cup reduced-sodium chicken broth

1 (8-ounce) carton nonfat plain yogurt

1/2 cup reduced-fat sour cream

3 tablespoons all-purpose flour

1 (2ounce) jar diced pimento, drained

1/4 teaspoon salt

1/4 teaspoon pepper

 

Method

Combine peas, onion, and chicken broth in a medium saucepan; cover and bring to a simmer. Simmer 5 minutes or until vegetables are tender.

 

Meanwhile, stir together yogurt, sour cream, and flour in a small bowl until smooth; stir in pimento, slat and pepper. Add to cooked onion mixture; cook over low heat, stirring constantly, until thickened.

 

Per serving: 15 g carbohydrates, 105 calories, 2 g fat(1 g saturated), 6 mg cholesterol, 6 g Protein, 250 mg sodium
