Confetti Potato Patties Recipe

Can you imagine pan-cooked potato patties with no fat? Here they are!.

 

Ingredients

1 pound baking potatoes

1 large carrot, shredded

1/2 cup minced green onions

2 egg whites

1/3 cup all-purpose flour

1 teaspoon dried thyme

1/4 teaspoon salt

1/4 teaspoon freshly ground pepper

vegetable cooking spray

 

Method

Peel and coarsely shred potatoes. In large bowl, combine potatoes, carrot, green onions, egg white, flour,  thyme, salt, and pepper; stir well.

 

Coat a large skillet with  cooking spray. For each patty, spoon 1/4 cup potato mixture into hot skillet, pressing into 3-inch rounds with the back of a fork. Cook over medium heat 7 to 8 minutes on each side or until golden brown.

 

Note: To bake potato patties, spoon 1/4 cup potato mixture on a a nonstick baking sheet coated with cooking spray; press into 3-inch rounds with the back of the fork. Bake at 400o for 20 minutes, turning after 10 minutes.
