Whipped Turnip Puff Recipe |

Ingredients 1 pound turnips, peeled and cut up (3 cups) 1/4 cup chopped onion 2 tbsp butter or margarine 1 tbsp sugar 1/2 tsp salt Dash pepper 3/4 cup soft bread crumbs (1 slice)
Method Cook turnip and onion as directed on cooking vegetables for turnips till tender. Drain. Add butter or margarine, sugar, salt, and pepper; beat well with electric mixer or mash with a potato masher. Add bread crumbs and eggs; beat well. Turn into a lightly greased 1-quart casserole. Bake, uncovered, in a 375o oven for 35 to 40 minutes. Makes 4 to 6 servings.
Whipped Rutabaga Puff: Prepare Whipped Turnip Puff as above, except substitute 1 medium rutabaga (1 pound), peeled and cut up for turnips. Cook rutabaga and onion as directed on cooking vegetables for rutabaga. Continue as directed.
Whipped Parsnip Puff: Prepare Whipped Turnip Puff as above, except substitute 1 pound parsnips (4 medium), cut up, for the turnips. Remove any woody portions from the parsnips. Cook parsnips and onion as directed on cooking vegetables for parsnips. Continue as directed.
