Vegatable Main Dish Recipes: Rice and Beans....Grains and Greens |

Most of our main dishes mix animal foods with vegetables, grains, beans -- even fruits. That creates satisfying dishes that help us eat the food Pyramid way.
There are many ways up and down the Pyramid, though. One strategy that works for many is to balance your foods not within each main dishes itself but over several meals. Perhaps your like steak. Have one --- a real steak, a juicy piece. Then have another meal which contains all vegetables. All vegetables doesn't mean steamed broccoli and a salad, however. You'll still need protein. That's where beans come in.
Beans, which contain everything a newborn plant needs to survive, are rich in iron and other minerals, folic acid, and other B vitamins, trace elements, fiber, and complex carbohydrates, with almost no fat. That's why nutritionists love them. But we hope you'll love them because they are delicious when cooked correctly. Combining beans and grains balances the protein more, which is why fat, and probably fewer calories. That leaves more room for every land-based culture in the world a central dish from the combination.
When incorporate a few meatless main dishes, such as these, with vegetable side dishes to produce all-vegetable meals three or four times a week, you'll be consuming less fat, much less saturated fat, and probably fewer calories. That leaves fewer room for occasional Extras in the form of dessert. |
