Scalloped Corn Recipe

Ingredients

1 beaten egg

1 cup milk

1 cup coarsely crushed saltine crackers (22 crackers)

1 17-ounce can cream-style corn

1/4 cup finely chopped onion

3 tbsp chopped pimiento

1 tbsp butter or margarine, melted

Oven 350o

 

Method

Combine egg, milk, 2/3 cup cracker crumbs, 1/4 tsp salt and dash pepper. Stir in corn, onion, and pimiento; mix well. Turn into a 1-quart casserole. Toss butter with remaining crumbs; sprinkle atop corn mixture. Bake, uncovered, in a 350o oven 1 hour or till a knife inserted near center comes out clean. Serves 6.
