Saucy Celery Casserole Recipe

Ingredients

4 cups thinly sliced celery

1/4 cup butter or margarine

2 tbsp all-purpose flour

1/4 tsp salt

1 cup milk

1 cup shredded American cheese (4 ounce)

1 4-ounce can chopped mushrooms, drained

2 tbsp chopped green pepper

2 tbsp chopped pimiento

Oven 350o

 

Method

In a saucepan cook celery in butter or margarine, covered, about 15 minutes or till crisp-tender; stir in flour and salt. Add milk; cook and stir till thickened and bubbly. Cook and stir 1 to 2 minutes more. Add 3/4 cup of the cheese; stir till melted. Stir in mushrooms. green pepper, and pimiento. Turn into a 1-quart casserole. Bake, uncovered, in a 350o oven for 20 minutes. Sprinkle with remaining 1/4 cup shredded cheese. Makes 6 servings.

 

Microwave directions: In a 1-quart nonmetal casserole cook celery in butter, covered, in a counter-top microwave oven on high power for 6 to 7 minutes or till crisp-tender; stir after 3 minutes. Stir in flour and salt. Add milk, 3/4 cup of the cheese, mushrooms, green pepper, and pimiento; mix well. Micro-cook, uncovered, 4 to 5 minutes or till thickened and bubbly, stirring after every minute. Sprinkle with remaining 1/4 cup cheese.
