Potato Patties Recipe

Ingredients

2 tbsp finely chopped onion

1/4 cup butter or margarine

3 medium potatoes, cooked, mashed, and chilled (2 cups mashed)

1 slightly beaten egg

1/4 cup all-purpose flour

 

Method

In a 10-inch, skillet cook onion in 1 tablespoon of the butter. Drain onion, reserving drippings in skillet. Combine onion, mashed potatoes, and egg. Shape into six 3-inch patties. Dip in flour. Add the remaining 3 tablespoons butter or shortening to skillet. Heat over medium heat. Add potato patties and cook about 5 minutes on each side or till browned. Serves 6.
