Orange-Glazed Carrots Recipe

Ingredients

3 cups carrots sliced into 1-inch pieces (about 1 pound)

1 tbsp sugar

1 tsp cornstarch

1/4 tsp salt

1/4 tsp ground ginger

1/4 cup orange juice

1 tbsp butter or margarine

 

Method

Cook carrots as directed in cooking vegetables. Drain. In a small saucepan combine sugar, cornstarch, salt and ginger. Add orange juice. Cook and stir till thickened and bubbly. Cook and stir 1 to 2 minutes more. Stir in butter or margarine. Pour over hot carrots, stirring lightly to coat. Makes 4 to 6 servings.

 

Microwave directions: In a 1 1/2-quart nonmetal bowl combine carrots with 2 tablespoons water. Cook, covered, in a counter-top microwave oven on high heat for 8 to 9 minutes or till tender, stirring once, Drain, In a 1-cup glass measure combine sugar, cornstarch, salt and ginger. Stir in orange juice. Cook, uncovered, on high power for 1 minute, stirring once, Stir in butter till melted. Pour sauce over carrots, stirring lightly to coat.
