Minted New Peas Recipe |

Ingredients 1/2 cup chopped green onion 2 tbsp butter or margarine 2 cups shelled peas or one 10-ounce package frozen peas 2 tbsp water 1 tbsp finely chopped fresh mint leaves or 1 tsp dried mint 1 tsp sugar 1 tsp lemon juice 1/4 tsp salt 1/4 tsp dried rosemary, crushed
Method Cook green onion in butter till tender. Add fresh or frozen peas, water, mint sugar, lemon juice, slat and rosemary. Cover and cook for 10 or 12 minutes or till peas are just tender; add more water as necessary. Garnish with a lemon twist and fresh mint leaves, if desired, Serves 4.
