Mashed Potatoes Recipe

Ingredients

6 medium potatoes (2 pounds)

2 tbsp butter or margarine

1/4 tsp salt

Dash pepper

Milk, heated (about 1/4 cup)

 

Method

Prepare, peel, and cook potatoes as directed on cooking vegetables. Drain. Mash with a potato masher or on low speed of electric mixer. Add butter or margarine, salt, and pepper. Gradually beat in enough of the hot milk to make light and fluffy. Makes 8 servings.

 

Volcano Potatoes: Prepare Mashed Potatoes as above, except mound potatoes into a greased 8x81 1/2 -inch round baking dish. Make a shallow crater in the centre. Whip 1/4 cup whipping cream. Fold 1/2 cup shredded American cheese into the whipped cream. Spoon into crater. Bake in a 350o oven about 20 minutes or till lightly browned. Makes 6 to 8 servings.

 

Duchess Potatoes: Prepare Mashed Potatoes as above, except let potatoes cool slightly. Beat in 1 egg. Using a pastry bag with a large star tip, pipe potatoes around a hot broiled beef steak or ham steak on a wooden plank. Brush with 1 tablespoon melted butter or margarine. Broil till potatoes are lightly browned. (Or, spoon into 6 or 8 mounds on a greased baking sheet and shape with the back of a spoon into nests. Brush with melted butter and bake in a 500o oven for 10 to 12 minutes.) Makes 6 to 8 servings.
