Artichoke with Butter Sauce Recipe

Ingredients

2 artichokes (about 10 ounces each)

1/4 cup butter or margarine

1 tbsp snipped parsley

1 tbsp lemon juice

 

Method

Prepare, cook, and drain artichokes as directed in cooking vegetables. Melt butter, stir in parsley and lemon juice. After draining artichokes upside down, turn right side up and serve with the butter sauce. Makes 2 servings.

 

Microwave directions: Prepare artichokes for cooking as on cooking vegetables. Place artichokes in a covered 2-quart nonmetal casserole or wrap in waxed paper. Cook in a counter-top microwave oven on high power for 6 to 7 minutes or till done. In a nonmetal bowl melt butter or margarine on high power about 1 minute. Stir in parsley and lemon juice. Drain artichokes and serve as above.

 

Note: To eat, pull off one leaf at a time and dip the base of the leaf in butter sauce. Turn the leaf upside down and draw through the teeth, eating only the tender flesh. Discard remainder of leaf. Continue removing leaves until the fuzzy "choke" appears. Scoop out and discard the "choke". Eat the remaining heart with a fork, dipping each piece in sauce.
