Wilted Spinach Salad Recipe (Version 2) |

Ingredients 8 cups torn fresh spinach or left lettuce (about 10 ounces) 1/4 cup sliced green onion Pepper 3 slices bacon 1 tbsp white wine vinegar 2 tsp lemon juice 1/2 tsp sugar 1/4 tsp salt 1 hard-cooked egg, chopped
Method Place torn spinach or lettuce in a large bowl; add the sliced green onion. Sprinkle a generous amount of pepper over the torn greens.
Cut uncooked bacon into small pieces. In
a 12-inch skillet cook bacon till crisp. Do not drain off dripping.
Stir in wine vinegar, lemon juice, sugar and salt. Remove skillet from
heat; add torn spinach or lettuce and the green onion. Toss gently till
well coated. Turn into a serving dish. Top with the chopped hard-cooked
egg; serve immediately. Makes 6 servings. Per 1/6 serving: 3 g carbohydrates, 52 calories, 3 g fat, 4 g Protein, 171 mg sodium
