Wilted Spinach Salad Recipe

Here, we "wilt" the spinach with a sauce of cranberry sauce, vinegar, olive oil, honey, thyme, salt, and  pepper instead of bacon grease.  Spinach is rich in iron, and the vitamin C in the orange sections helps makes this iron more available to the body. That's true any time you combine a vegetable source of iron (beans, greens) with a food rich in vitamin C 9many fruits and vegetables). The acidity of the vinegar helps too.

 

Ingredients

8 cups torn

fresh spinach leaves (about a pound)

1/2 cup fresh orange sections

1/3 cup snipped fresh chives or minced green onion

1/4 cup whole-berry cranberry sauce

2 tablespoons balsamic or red wine vinegar

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon dried thyme

1/4 teaspoon salt

1/2 teaspoon freshly ground pepper

 

Method

Combine spinach, orange, and chives in a salad bowl; set aside.

Combine remaining ingredients in a small saucepan; bring to a boil. Pour over spinach mixture, and toss. Serve immediately.
