Southern Succotash Salad Recipe

Here's a salad that could be a meal. It will serve two to four as a main course, six to eight as a side salad. The relatively small amounts of ham provide protein, B vitamins (especially B1), iron and other minerals, and of course, flavor; without much fat at all. There's a fair amount of sodium, though, so serve this with a side vegetable that doesn't require added salt, such as sweet potatoes. Salad with oil and vinegar is salt-free; so is fresh fruit. Eat what you like ---- in the right proportions.

 

Ingredients

1 3/4 cups cooked fresh or frozen corn kernels, thawed

1 3/4 cups cooked fresh or frozen

1 cup finely diced cooked lean ham

3/4 cup finely chopped red onion

3/4 cup thinly sliced celery

1/4 cup minced fresh cilantro or parsley

1/2 cup Creamy Pepper Ranch Salad Dressing or commercial nonfat ranch dressing (such as Kraft or Hidden Valley)

2 tablespoons lime juice

1/2 teaspoon ground cumin

 

Method

Combine corn, limas, ham, onion, celery, and cilantro in a bowl. Combine salad dressing, lime juice, cumin, and red pepper; pour over salad, and toss well. Cover and chill at least 3 hours, stirring occasionally. Serve on lettuce leaves.
