Shrimp-Avocado Salad Recipe

Ingredients

1 small avocado, peeled, seeded, and cut up

1/2 cup buttermilk

1 3-ounce package cream cheese

1 tbsp lemon juice

1 small clove garlic

1/4 tsp bottled hot pepper sauce

6 cups torn lettuce

1 pound shelled shrimp, cooked and drained

18 cherry tomatoes, halved

4 ounces Swiss cheese, cut into julienne strips

 

Method

In a blender container place the first 6 ingredients and 1/2 teaspoon salt; cover and blend till smooth. Arrange lettuce in a salad bowl. Arrange shrimp, tomatoes, and cheese atop. Sprinkle with a little pepper. Toss with avocado mixture to serve. Makes 6 servings.
