Mixed Greens with Raspberry Vinaigrette Salad Recipe |

There's no easier way to add fresh vegetables to your family's diet's than serving salads. Fresh salads greens are good sources of fiber, vitamin C, iron, calcium, vitamin A (in the form of beta-carotene), and B vitamins, especially folic acid. That makes sense - folic acid gets its name from the Latin word for "leaf" (folia, as in "foliage"). Folic acid is a wonder vitamin. It protects DNA, helps to prevent the most common form of birth defect (neural tube defects such as spina bifida), and protects against cancer and heart disease. It may even help prevent depression. It's widely distributed in fruits and vegetables. Many Americans, though, don't get enough.
We would if we got into the salad habit. To save time, you can purchase prewashed, mixed salads greens in the supermarket (sometimes called mesclun). If fresh berries are in season, they add a surprising yet fitting flavor accent.
Ingredients 1 cup fresh or frozen raspberries, thawed 3 tablespoons raspberry vinegar 3 tablespoons orange juice 2 teaspoons sugar 2 tablespoons olive oil 1 tablespoons minced fresh basil or 1 teaspoon dried basil 1/4 teaspoon salt 8 cups mixed salad greens (curly endive, red leaf lettuce, romaine, watercress, or arugula) 1 cup red onion, sliced thinly into rings 1 cup fresh berries: blueberries, sliced strawberries, raspberries (optional) 2 ounces goat cheese (or feta), crumbled freshly ground pepper
Method Process raspberries, vinegar, orange juice, sugar, olive oil, basil, and salt in electric blender until smooth. Press through a fine wire-mesh sieve into a bowl. Cover and refrigerator at least 1 hour.
Toss salad greens, onion, and 1/2 cup salad dressing in a large bowl; divide evenly among 6 salad plates. Arrange berries berries, if desired, on plates; crumble goat cheese evenly over salads, and sprinkle with pepper. refrigerate remaining salad dressing up to 1 week.
