Meatless Meals-in-a-bowl Recipe |

Ingredients 4 hard-cooked eggs, chilled 4 cups torn fresh spinach 1 15-ounce can garbanzo beans, drained 1 cup cauliflower flowerets 1 cup sliced fresh mushrooms 1 cup cherry tomatoes, halved 1 small cucumber, thinly sliced 1/2 small red onion, thinly sliced and separated into rings 1/2 cup coarsely chopped walnuts 1 cup Avocado Dressing
Method Slice 3 of the hard-cooked eggs. Cut the remaining egg into wedges; set aside.
In a salad bowl combine torn spinach, beans, cauliflower flowerets, mushrooms, tomatoes, cucumber, onion, walnuts, and the sliced hard-cooked eggs. Pour Avocado Dressing over salad; toss to coat. Garnish with the hard-cooked egg wedges. Makes 6 servings.
