Ingredients 1 head curly endive, torn (6 cups) 1/2 medium head iceberg lettuce, torn (3 cups) 10 ounces cooked lamb or beef, cut into julienne strips (2 cups) 2 tomatoes, peeled and chopped 3/4 cup cubed feta cheese 1/4 cup sliced pitted ripe olives 1/4 cup sliced green onion 2/3 cup olive oil or salad oil 1/3 cup white wine vinegar 1/2 teaspoon slat 1/4 teaspoon dried oregano, crushed 1 2-ounce can anchovy fillets, drained
Method In a mixing bowl toss together endive and lettuce; mound onto 6 individual salad plates. Arrange lamb or beef, tomatoes, feta cheese, olives, and onion atop greens. To make dressing, in a screw-top jar combine oil, vinegar, salt, oregano, and 1/8 teaspoon pepper. Cover; shake well to mix. Pour dressing over salads. top salads wit the anchovy fillets. Serves 6.
