Golden Goddess Salad Recipe

Ingredients

1 medium head romaine, torn(6 cups)

1/2 medium head curly endive, torn (3 cups)

1 9-ounce package frozen artichoke hearts, cooked, drained, and cooled, or one 14-ounce can artichoke hearts, drained

1/2 cup sliced pitted ripe olives

2 medium tomatoes, cut into wedges

Green Goddess Dressing

 

Method

In a large salad bowl combine the romaine, endive, artichoke hearts, ripe olives, and tomato wedges. Cover and chill. To serve, pour desired amount of Green Goddess Dressing over the salad. Toss lightly to coat vegetables. Makes 6-8 servings.
