Fruit-and-Nut Tropical Slaw Recipe |

Ingredients 1 8 1/4-ounce can pineapple slices 1 tbsp lemon juice 1 medium banana, sliced (1 cup) 3 cups finely shredded cabbage 1 cup thinly sliced celery 1 11-ounce can mandarin orange sections, drained 1/2 cup chopped walnuts 1/4 cup raisins 1 8-ounce carton orange yogurt
Method
Drain pineapple, reserving 2 tablespoons
syrup. Cut up pineapple; set aside. Combine the reserved syrup and
lemon juice. Toss banana slices with 1 tablespoon of the juice mixture;
set aside remaining juice. In a large bowl combine pineapple, banana,
cabbage, celery, oranges, nuts and raisin. Combine the reserved juice
mixture with the orange yogurt and 1/2 teaspoon salt. Add to
pineapple-cabbage mixture; toss lightly to coat. Cover and chill. Makes
8 to 10 servings. Per 1/8 serving: 24 g carbohydrates, 146 calories, 5 g fat, 3 g Protein, 176 mg sodium
