Cucumber Ring Supreme Salad Recipe

Ingredients

1 3-ounce package lemon-flavored gelatin

1 cup boiling water

3/4 cup cold water

3 tablespoons lemon juice

1 medium cucumber, thinly sliced

2 tablespoons sugar

1 envelope unflavored gelatin

3/4  teaspoon salt

3/4 cup water

2 tablespoons lemon juice

1 8-ounce package cream cheese, softened

3 medium or 4 medium cucumbers

1 cup mayonnaise or salad dressing

1/4 cup snipped parsley

3 tablespoons finely chopped onion

Lettuce

Cherry tomatoes (optional)

 

Method

In a mixing bowl dissolve the lemon-flavored gelatin in boiling water; add the 3/4 cup cold water and 3 tablespoons lemon juice. pour into a 6 1/2-cup ring mold. Chill till partially set (the consistency of unbeaten egg whites). Overlap the thinly sliced cucumber atop gelatin mixture in mold; press into gelatin. Chill till almost firm.

 

Meanwhile, in a saucepan mix the sugar, unflavored gelatin, and salt. Add the 3/4 cup water; stir over low heat till gelatin and sugar dissolve. Stir in the 2 tablespoons lemon juice. Gradually stir hot gelatin mixture into softened cream cheese till mixture is smooth..

 

Peel and halve the 3 or 4 cucumbers lengthwise; scrape out seeds and discard. Grind, using the fine blade of a food grinder, or finely shred cucumber, mayonnaise or salad dressing, parsley, and onion into cream cheese mixture. Carefully spoon over the almost-firm gelatin in mold. Chill till firm. Unmold onto a lettuce-lined plate. Garnish with cherry tomatoes, if desire. Makes 10 -12 servings.
