Cool Broccoli Salad with Yogurt-Basil Dressing Recipe

Ingredients

1 1/2 pounds fresh broccoli

1/2 pound sliced fresh mushrooms

1 (2-ounce) jar sliced pimento, drained

1/2 cup sliced green onion

1/4 cup sliced ripe olives

1 cup plain nonfat yogurt

1/2 cup grated Parmesan cheese

2 tablespoons balsamic or white wine vinegar

1/4 cup fresh basil, minced (or 2 teaspoon dried basil)

1/2 teaspoon dried oregano

1 clove garlic, minced

 

Method

Trim off large leaved of broccoli, and remove tough ends of lower stalks.

 

Wash and cut into 1-inch pieces. Combine broccoli, mushrooms, pimento, green onion, and olives in a large bowl.

 

Combine yogurt and remaining ingredients; stir well. Stir into broccoli mixture; mix well. Cover and refrigerate 4 hours before serving.
