Coleslaw Vinaigrette Recipe |

Ingredient 2 cups shredded cabbage 1/3 cup sliced green pepper 1/4 cup snipped parsley 3 tbsp vinegar 2 tbsp sugar 2 tbsp salad oil 2 hard-cooked eggs, chilled
Method
In a large bowl combine the cabbage,
green pepper, and parsley. Stir together vinegar, sugar, salad oil, and
1 tsp salt till sugar is dissolved. Pour vinegar mixture over
vegetables; toss to coat. Cover and chill. Separate yolk from white of
1 of the hard-cooked eggs. Cut up white; toss with cabbage. Slice
remaining egg; arrange atop salad. Sieve yolk over the egg slices.
Serves 4. Per 1/4 serving: 10 g carbohydrates, 139 calories, 10 g fat, 4 g Protein, 573 mg sodium
