Choose-a-Fruit Salad Platter Recipe

Ingredients

8 cups desired fresh fruits **

Lemon juice

lettuce

Honey-lime dressing, strawberry-cheese dressing, or spicy nectar dressing

 

Method

If necessary, brush fruits with some lemon juice to prevent darkening. On a large lettuce-lined platter arrange the fresh fruits. Serve with Honey-Lime Dressing, Strawberry-Cheese Dressing, or SPpcy Nectar Dressing. Makes 10 -12 servings.

 

Honey-Lime Dressing: In a small mixer bowl combine 1/3 cup honey, 1/2 teaspoon finely shredded lime peel, 1/3 cup lime juice, 1/4 teaspoon slat, and 1/4 teaspoon ground mace. Gradually add 3/44 cup salad oil, beating with an electric mixer or rotary beater till mixture is smooth and thickened. Cover and chill. Makes 1 1/2 cups.

 

Strawberry-Cheese Dressing: In a small mixer bowl combine one 3-ounce package cream cheese, softened; 1/2 of a 10-ounce package (1/2 cup) frozen strawberries, thawed; 1 tablespoon sugar; 1 tablespoon lemon juice; and dash salt . Beat till smooth. Add 1/2 cup salad oil in a slow stream, beating till thick. Cover and chill. Makes 1 1/2 cups.

 

Spicy Nectar Dressing: In a small mixer bowl combine 1 cup dairy sour cream, 1/2 cup apricot nectar, 1/2 cup salad oil, 2 tablespoon sugar, 1/2 teaspoon ground cinnamon, 1/2 teaspoon paprika, and dash salt. Beat till smooth. Cover and chill. Makes 2 cups.
