Chicken Salad Remoulade Recipe |

Remoulade is a piquant mayonnaise sauce for cold poultry, meats, and shellfish. The name itself comes from the French (and earlier, Latin) name fore "horseradish". This one leaves out nearly all the saturated fat, carbohydrates and cholesterol that clog most versions, yet remains spirited and satisfying.
For a cool summer menu, serve with Cool Broccoli Salad with Yogurt-Basil Dressing, Bavarian Slaw, bread and fruit for dessert. Keep it cool!
Ingredients 2 tablespoons lemon juice 2 tablespoons Creole mustard 1 tablespoon olive oil 1 teaspoon paprika 1 teaspoon white wine vinegar 1 1/2 teaspoons prepared horseradish 1 teaspoon Worcestershire sauce 2 cups shredded, cooked white-meat chicken 3/4 cup thinly sliced celery 1/4 cup minced green onion 4 large leaf lettuce leaves 12 cherry tomatoes
Method Combine lemon juice, mustard, paprika, vinegar, horseradish, and Worcestershire sauce in a medium bowl; mix well. Add chicken, celery, and green onion; toss well. Cover and refrigerate at least 3 hours, stirring occasionally.
Line salad plates with lettuce leaves; spoon salad mixture over. Garnish each with 3 cherry tomatoes.
