Tuna a la King Recipe

Ingredients

3 beaten egg yo0lks

1/4 butter mar margarine, softened

1/2 tsp paprika

1 cup fresh mushrooms

1/4 cup chopped green pepper

1/4 cup chopped onion

2 tbsp butter or margarine

2 tbsp all-purpose flour

2 cups light cream

2 tbsp lemon juice

2 7-ounce can solid white pack, tuna, drained and flaked

2 tbsp dry sherry

6 to 8 baked patty shells

 

Method

Combine yolks, 1/4 cup butter, and paprika; set aside. Thinly slice mushrooms. Cook mushrooms, green pepper, and onion in 2 tbsp butter till tender. Stir in flour and 3/4 tsp salt. Add cream; cook and stir till bubbly. Add pimiento and lemon juice; ,ix well. Add egg yolks mixture all at once; ,mix well. Stir in tuna and sherry; heat through. Spoon into patty shells. Makes 6 to 8 servings.
