Skillet-Fried Fish Recipe |

Ingredients 6 fresh or frozen pan-dressed trout or other fish (about 6 ounces each) 2/3 cup yellow cornmeal 1/4 cup all-purpose flour 2 teaspoons slat 1/2 teaspoon paprika Dash cayenne (optional) 1 5 1/3-ounce can (2/3 cup) evaporated milk Cooking oil
Method Thaw fish, if frozen. Thoroughly stir together cornmeal, flour, salt, paprika, and cayenne. Dip fish in evaporated milk, then coat with seasoned cornmeal mixture.
Heat a small amount of cooking oil in a heavy, large skillet over hot coals till oil is hot. Cook fish, a few at a time, in hot oil 4 to 5 minutes or till lightly browed. Turn and cook 4 to 5 minutes more or till fish flakes easily when tested with a fork. Add more oil as needed. Drain the fish on paper toweling before serving. Makes 6 serving.
