Seared Tuna with Corn Relish Recipe

Ingredients

Vegetable cooking spray

4 cups fresh corn or frozen thawed

3/4 cup minced green pepper

1/2 cup finely chopped purple onion

1 cup finely diced plum tomato

1 tablespoon chili powder, divided

1/2 teaspoon ground red pepper, divided

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 cup nonfat sour cream

1 tablespoon canola oil

3 (1 1/2 inch) tuna steaks (8 ounces each)

fresh cilantro or parsley sprigs

 

Method

Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add corn, green pepper, and purple onion; saute until tender. Stir in 1 teaspoon chili powder, 1/4 teaspoon red pepper, garlic powder, and salt; saute 30 seconds. Remove from heat; stir in sour cream.

 

Coat tuna steaks on both sides with remaining 2 teaspoons chili powder and remaining 1/4 teaspoon red pepper. Let stand 5 minutes. Heat oil in skillet over medium-high heat; add tuna and cook 2 to 30 minutes on each side or until desired degree of doneness. Cut tuna across grain into 1/2-inch slices; arrange on serving plates and top with corn mixture and cilantro.
