Salmon Loaf Recipe

Ingredients

1 16-ounce can salmon, drained

2 cups soft bread crumbs (about 2 1/2 slices)

2 tbsp chopped green onion

1 tbsp butter or margarine, melted

1/2 tsp salt

1/8 tsp pepper

1/2 cup milk

1 slightly beaten egg

Oven 350o

 

Method

Flake salmon, discarding skin and bones. In a bowl combine salmon, bread crumbs, chopped onion, butter or margarine, salt and pepper. Mix well. Combine milk and egg; add to salmon mixture and mix thoroughly. Shape into a loaf in a greased shallow baking pan or in a greased 7 1/2x3 1/2x2-inch loaf pan. Bake in a 350o oven for 35 to 40 minutes. If desired, serve with Cheese Sauce. Makes 3 or 4 servings.
