Marinated Fish Kebabs Recipes

Ingredients

1 pound fresh or frozen haddock fillets

3 tablespoons cooking oil

3 tablespoons dry sherry

3 tablespoons spy sauce

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon brown sugar

1 teaspoon dry mustard

1/8 teaspoon pepper

1 large green pepper

6 mushroom caps

12 cherry tomatoes

 

Method

Thaw fish, if frozen. Cut fish into1-inch pieces. For marinade, in a bowl combine oil, dry sherry, soy sauce, green onions, garlic, brown sugar, dry mustard, and pepper. Place fish recipes in marinade. Cover; marinade at room temperature for 1 hour.  Drain fish, reserving marinade. Cut green pepper into 1-inch squares. Pour some boiling water  over green pepper and mushrooms in a bowl. Let stand 1 minute; drain. On 6 skewers alternate fish, green pepper, cherry tomatoes, and mushrooms. Grill kebabs over medium coals 8 to 10 minutes or till fish is done, turning and basting frequently with marinade.  Makes 6 servings.
