Grilled Rock Lobster Tails Recipes

Ingredients

4 frozen rock lobster tails (about 5 ounces each)

1/4 cup butter or margarine, melted

2 teaspoons lemon juice

Dash ground ginger

Dash chili powder

 

Method

Thaw rock lobster tails. Cut off the thin undershell membrane with kitchen scissors. Bend tail back to crack shell or insert long skewers lengthwise between shell and meat to prevent curling. (to butterfly rock lobster rails, partially thaw tails; snip through center of hard top shell with kitchen scissors. With a sharp knife cut through the meat, but not through undershell. Spread open.)

 

For sauce, combine melted butter, lemon juice, ginger, and chili powder, brush over lemon juice, ginger, and chili powder; brush over lobster meat. With meat side up, grill lobster tails over hot coals about 7 minutes. Brush with sauce; turn shell side up. Grill 7 to 8 minutes more or till meat has lost its transparency and is opaque. Makes 4 servings.
