Fried Clams, Oyster or Scallops Recipe

Ingredients

2 cups shucked clams or oyster, or fresh or frozen scallops, thawed

1/3 cup all-purpose flour

1/2 tsp salt

1/8 tsp pepper

2 beaten eggs

3/4 cup finely crushed saltine crackers or fine dry bread crumbs

shortening or cooking oil for deep-fat frying

 

Method

Drain clams, oyster or scallops. (If scallops are large, slice in half). Gently pat dry with paper toweling. In a shallow bowl stir together flour, salt, and pepper. Roll seafood in seasoned flour. Dip coated seafood in a mixture of beaten eggs and 2 tbsp water, then roll in cracker or bread crumbs. Fry in deep hot fat (375o) till golden. Allow about 1 minutes for clams; about 1 1/2 minutes for oyster; and about 2 minutes for scallops. Drain on paper toweling. Serve fried seafood with tartar sauce or cocktail sauce, if desired. Makes 4 servings.
