Fish in a Basket Recipe

Ingredients

4 fresh or frozen whole pan-dressed lake or brook trout or perch (about 10 to 12 ounces each)

1/3 cup all-purpose flour

1/2 teaspoon salt

1/8 teaspoon pepper

1/4 cup butter or margarine, melted

 

Method

Thaw fish, if frozen. In a bowl combine flour, salt, and pepper. Dip fish in seasoned flour, coating thoroughly. Place coated fish in a well-greased wire grill basket. Grill fish over hot coals about 10 minutes. Turn fish and baste with melted butter. Makes 4 serving.

 

Note: Wire grill baskets are indispensable for foods that are difficult to turn, such as fish or shrimp. a hinged basket is more versatile, since it adjusts to the thickness of foods.
