Broiled Fish Recipes

 Ingredients

Broiled, 1-inch-thick salmon steaks, served with Dill Sauce.

2 pounds fresh or frozen fish fillets or steaks.

2 tablesoons butter or margarin, melted or Dill Sace.

Thaw fish, if frozen. Preheat broiler. Cut fillet into 6 portions. Place fish in a single layer on a greased, unheated rack in a broiler pan or in a greased baking pan. Tuck under any thin edges. Brush half the melted butter or Dill Sauce over fish.

Season buttered fish with salt and pepper. Broil fish 4 inches from heat until fish flakes easily when tested with a fork. Brush fish with remaining melted butter or Dill Sauce during cooking. Allow about 10 minutes for 1-inch-thick fillets or steaks. Makes 6 servings.


Dill Sauce: In a smalll saucepan melt ½ cup butter; stir in 1 tablespoon lemon juice, ½ teaspoon salt, ½ teaspoon dried dillweed or 1 teaspoon snipped fresh dill, and dash pepper.
