Rich-and-Fudgy Brownies Recipe |

Cocoa powder is a health-conscious dessert lover's best friend. It's fat-free, cholesterol-free, and low in calories (unlike chocolate, which is made with cocoa butter, whole milk, and sugar). The trick is to use cocoa powder to impart true chocolate test, keeping other ingredients low in fat and making sure the final product is moist and chewy. Which we did. The result is a brownie that's as delicious as brownies with twice the calories and fat.
Ingredients: 2/3 cup unsweetened cocoa powder 1/3 cup all-purpose flour 1/2 teaspoon baking powder 1/3 cup canola oil 1/2 cup firmly packed light brown sugar 1/2 cup sugar 4 large egg whites 2 teaspoons vanilla extract vegetable cooking spray 1/4 cup raspberry jam, melted (optional) 3 tablespoons powdered sugar
Method: Preheat oven to 350o. Blend cocoa powder, flour, and baking powder in a small bowl until well combined; set aside. Combine oil, sugar, egg whites, and vanilla in a large bowl; mix with a wire whisk until smooth. Stir in flour mixture.
Spread batter in an 8-inch square baking pan that has been coated with cooking spray. Bake for 20 to 22 minutes or until edges just begin to brown and pull away from sides of pan. Do not overcook.
For a nice added touch, brush warm jam on top of warm brownies; cool completely in pan on a wire rack. Sift powdered sugar on top of brownies. Cut into squares. (To cut cleaner pieces, chill before cutting.)
