Orange Souffle Recipe |

Ingredients: 3 tablespoons butter or margarine 1/4 cup all-purpose flour dash salt 2/3 cup milk 1 teaspoon finely shredded orange peel 4 egg yolks 1/4 cup sugar Oven 325o
Method: Fit a 2-quart souffle dish with a greased and sugared foil collar; set aside. In a a saucepan melt butter or margarine. Stir in all-purpose flour and dash salt. Add milk; cook and stir till thick and bubbly. (Mixture will be very thick.) Remove from heat; stir in orange peel and 1/3 cup orange juice. Mix well. Beat egg yolks about 5 minutes or till thick and lemon colored. Gradually blend orange mixture into beaten egg yolks. Wash b eaters thoroughly.
In a large mixing bowl beat 4 egg whites to soft peaks; gradually add sugar, beating to stiff peaks. Fold orange mixture into egg whites. Turn into ungreased souffle dish. Bake in a 325o oven for 60 to 65 minutes or till a knife inserted near center comes out clean. Serve immediately with Orange Sauce. Makes 8 servings.
