Meringue Shells Recipe

Ingredients:

3 tablespoons butter or margarine

1/4 cup all-purpose flour

1/4 teaspoon salt

3/4 cup milk

4 egg yolks

1/4 cup sugar

2 tablespoons hot water

4 egg whites

1/2 teaspoon vanilla

Oven 325o

 

Method:

Let 3 egg whites stand in a small mixer bowl about 1 hour or till they come to room temperature. Meanwhile, cover baking sheets with brown paper. Draw eight 3-inch circles or one 9-inch circle; set aside. Add 1 teaspoon vanilla, 1/4 teaspoon cream of tartar, and dash salt to egg whites. Beat to soft peaks. Gradually add 1 cup sugar, beating till very stiff peaks form. Spread meringue over circles on paper to make 8 individual shell or one 9-inch meringue shell; use the back of a spoon to shape into shells. Bake either size in a 275o oven for 1 hour. Turn off oven and let dry in oven. with door closed, for at least 1 hour. Peel off paper. To serve, fill shells with ice cream or pudding and top with fruit or ice cream topping. If necessary to store shells before serving, place in a plastic bag or air tight container. Makes 8 servings.
