Chocolate Souffle Recipe

Ingredients:

3 tablespoons butter or margarine

1/4 cup all-purpose flour

1/4 teaspoon salt

3/4 cup milk

4 egg yolks

1/4 cup sugar

2 tablespoons hot water

4 egg whites

1/2 teaspoon vanilla

Oven 325o

 

Method:

Fit a 2-quart souffle dish with a greased and sugared foil collar. (Or, use a 20quart souffle dish without collar.). In a small saucepan melt butter or margarine. Stir in all-purpose flour and salt. Add milk; cook and stir till thick and bubbly. (Mixture will be very thick.) Remove from heat. Beat egg yolks about 5 minutes or till thick and lemon colored. Gradually stir unsweetened chocolate, melted and cooled; add sugar and hot water.

Stir into egg yolk mixture. Wash beaters thoroughly.

 

In a large mixing bowl beat egg whites and vanilla to soft peaks; gradually add sugar, beating to stiff peaks. Fold chocolate mixture into egg whites. Turn into ungreased souffle dish. Bake in a 325o oven for 60 minutes (50 minutes for 2-1uart) dish) or till a knife inserted near center comes out clean. Serve immediately with whipped cream. Makes 6 servings.
