How to Separate Eggs?

  • Gently crack the egg in the center with a knife.

  • Over a bowl, slip yolk back and forth from one shell half to the other, allowing the white to fall into the bowl.

  • If the yolk breaks into the whites, remove all yolk traces, since they can prevent the whites from whipping.

  • Cold eggs are easier to separate; bring to room temperature before beating.
