How to Arrange Coals for Barbecuing?

For spit-roasting, place a foil drip under meat and spread coals in a circle around the firebox. (The drip pan catches drippings and helps to avoid flare-ups. You make one out of heavy-duty foil.)

 

When cooking large pieces of meat in a covered grill, center the drip pan in the firebox and pile coals on both long sides of the pan. Place meat on grate over drip pan.

 

For foods cooked flat, such as steaks and burgers, spread coals over the entire firebox. Place coals about 1/2 inch apart.

 

For kebabs, line up coals in parallel rows, placing some around edges of grill. Place kebabs on grate over spaces between briquette rows.
