Turkey Piccata Recipes

Ingredient

1/3 cup all-purpose flour

1/2 teaspoon salt

1/2 teaspoon freshly ground pepper

4 (4-ounce) turkey cutlets, pounded to even thickness and halved

vegetable cooking spray

2 teaspoons olive oil

1 clot garlic, minced

3/4 cup reduced-sodium chicken broth

2 tablespoons lemon juice

1/2 teaspoon sugar

1 tablespoon drained capers, rinsed

1 teaspoon grated lemon rind

2 tablespoons minced fresh parsley

 

Method

Combine flour, salt, and pepper in a shallow dish; dredge turkey cutlets in flour mixture, and shake off excess.

 

Coat a large nonstick skillet with cooking spray; add oil, and heat over medium-high heat. Add turkey cutlets, and cook 2 to 3 minutes on each side or until browned and meat loses its pink color. Transfer to a serving platter, and keep warm.

 

Saute garlic in skillet for one or two minutes, then add chicken broth, lemon juice, and sugar; bring to a boil, stirring constantly. Boil, uncovered, until mixture reduces to 1/2 cup. Stir in capers, lemon rind, and parsley; pour over turkey.
