White Cake Supreme Recipe

What can you do with this White Cake Supreme Recipe?

Simply prepare this as the base for Chocolate Chip Cake, Lady Baltimore Cake, Cupcakes, Petits Fours. For lowest carbohydrates content, opt for the preparation of White Cake Supreme Cupcakes, for diabetic friends.

Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup shortening
1 1/2 cups sager
1 1/2 teaspoons vanilla
1 cup milk
5 egg whites

Oven 375oC

Method
Grease and lightly flour two 9x1 1/2 -inch round baking- pans. Combine flour, baking powder, and salt. In a mixer bowl beat shortening on medium speed of electric mixer about 30 seconds. Add sugar and vanilla and beat till fluffy. Add dry
ingredients and milk alternately to beaten mixture, beating on low speed after each addition. Wash beaters.

In a small mixer mil beat egg whites till stiff peaks form. Gently fold into flour mixture. Turn into prepared pans. Bake in 375?oven about 20 minutes or till cake tests done. Cool 10 minutes on wire racks. Remove from pans. Cool. Serves 12.
 

Chocolate Chip Cake

Prepare White Cake Supreme as above, except pour half of the batter into 2 prepared pans.
Sprinkle 1/3 cup semisweet chocolate pieces over batter in each pan. Add remaining batter, spreading evenly; sprinkle each 1/3 cup more chocolate pieces. Bake as above. Serves 12.

Lady Baltimore Cake

Prepare White Cake Supreme as above, except spread 1 layer with. Date-Nut Filling and frost Seven-Minute Frosting (see recipe, page 194). For Date-Nut Filling, combine 1/4 of the Seven-Minute Frosting; 1 cup chopped, pitted dates or figs; 1/2 cup raisins; 1/2 cup chopped candied cherries; and 1/2 cup chopped pecans. Frost cake with remaining frosting. Serves 12.

Cupcakes

Grease and lightly flour muffin pans or line with bake cups; set aside. Prepare White Cake Supreme as above. Fill each cup half full. Bake in a 375?oven 18 to 20 minutes or till done. Cool on a wire rack. Frost with desired frosting. Makes 30.

Petits Fours

Grease and lightly flour a 13x9x2-inch baking pan. Prepare Cake Supreme as above; turn into prepared pan. Bake in a 375o oven for 25 minutes. Cool 10 minutes on a wire rack; remove from pan. Cool thoroughly. Cut into 1 1/2-inch squares, diamonds or circles. Makes 36 to 40.
