Seven-Minute Frosting Recipe |

Ingredients: 1 1/2 cups granulated sugar 1/3 cup cold water 2 egg whites 2 teaspoons light corn syrup or 1/4 teaspoon cream of tartar 1 teaspoon vanilla
Method: In the top of a double boiler combine sugar, cold water, egg whites, corn syrup or cream of tartar, and dash salt. Beast 30 seconds on low speed of electric mixer. Place over boiling water (upper pan should not touch water). Cook about 7 minutes or till frosting forms still peaks. Remove from heat; add vanilla. Beat 2 to 30 minutes till spreading consistency. Frost tops and sides of two 8- or 9- inch layers or one 10-inch tube cake.
Peppermint-Stick Frosting:Prepare Creamy White Frosting as above, except 1/4 teaspoon peppermint extract instead of the 1/2 teaspoon lemon extract instead of vanilla. Garnish cake with crushed peppermint-stick candy.
Seafoam Frosting:Prepare Seven-Minute Frosting as above, except use 1 1/4 cups packed brown sugar instead of the granulated sugar, and 1/4 cup cold water instead of the 1/3 cup cold water.
