Petits Fours Icing Recipe

Ingredients:

3 granulated sugar

1 1/2 cups hot water

1/4 teaspoon cream of tartar

1 teaspoon vanilla

Sifted powdered sugar

 

Method:

In a 2-quart saucepan combine granulated sugar, hot water, and cream of tartar. Cover and cool till boiling. Uncover; clip candy thermometer to saucepan. Cook till temperature of mixture 226o on candy thermometer. Remove from heat. Cool at room temperature to 110o. Stir in vanilla. Stir in enough sifted powder sugar (about 2 1/2 cups) to make of pouring consistency. Tint with food coloring, if desire. Spoon over cake pieces. Frost about 36 petits fours.
